Sauces & BasicsN'duja Buffalo Wing Sauce
Our restaurant's tomato buffalo sauce with Turchetti's 'Nduja blended in. A little 'Nduja goes a long way, and it takes over with heat and deep, savory flavor. Made for our Tallow-Fried Wings.

Measure everything out first. Break the 'Nduja into small pieces and let it sit out while you work so it softens a little.
Melt the butter in a small saucepan over low heat. Don't let it brown. If it starts sizzling loudly or smells nutty, pull it off the heat. Once it's melted, take it off the heat and let it cool for 2 to 3 minutes, so it's warm, not hot.
Put the Frank's, 'Nduja, granulated garlic, tomato paste and salt in a tall cup or a 2 cup measuring cup.
Blend with an immersion blender while you slowly pour in the warm butter. Keep blending for 30 to 60 seconds, until the sauce is smooth, glossy and one even color with no specks of 'Nduja. No immersion blender? Use a regular blender. Don't try to whisk it, cold 'Nduja won't whisk into the sauce.
Use it right away on hot wings. Keep leftovers covered in the fridge. It firms up when cold, so warm it gently over low heat, stirring, until it's just warm. Don't let it get hot or boil, or the sauce will break.
